This Sencha is produced in the Uji area of the Shizuoka prefecture. It is a so called Fukamushicha or deep-steamed Sencha.which means that is initially steamed for a longer time than what it’s considered to be usual.
Normally, the steaming process for green tea runs for about 30 seconds to 1 minute, while Fukamushicha is steamed for longer than 1 or 2 minutes. The main advantages of using the fukamushi process is that the astringency is suppressed, while gaining more body and sweetness.
